Ingredients

Chicken & Veg

500g boneless chicken thighs, cubed
1/4 head cabbage, chopped
1 sweet potato, sliced into sticks
100g tteok (rice cakes)

Spicy Sauce

3 tbsp gochujang (chili paste)
2 tbsp gochugaru (chili powder)
2 tbsp soy sauce
2 tbsp sugar
1 tbsp minced garlic
1 tsp curry powder

Instructions

Mix all sauce ingredients (gochujang, gochugaru, soy sauce, sugar, garlic, curry powder) in a bowl.

Combine the cubed chicken with the sauce and let it marinate for at least 20 minutes.

Heat a large skillet or tabletop griddle. Add a splash of oil, then add the marinated chicken, sweet potato, and rice cakes.

Stir-fry on medium-high heat for 5-7 minutes, then add the cabbage and continue cooking until the chicken is cooked through and vegetables are soft.

Finish with chopped scallions and sesame seeds.

Use chicken thighs for juiciness; breast meat dries out too fast.

Add mozzarella cheese on top at the end for 'Cheese Dakgalbi'.
