Ingredients

Meat

600g thick-cut fresh pork belly strips

Accompaniments

10 cloves garlic, whole or sliced
4 green chili peppers, sliced
1 head red leaf lettuce
1 bunch perilla leaves

Dipping Sauces

4 tbsp ssamjang (seasoned soybean paste)
2 tbsp sesame oil
1 tsp salt
1/2 tsp black pepper

Instructions

1

Wash the lettuce and perilla leaves and drain well.

2

Prepare a sesame oil dip by mixing the sesame oil, salt, and pepper in small individual saucers.

3

Heat a grill plate or heavy skillet over medium-high heat. Place the pork belly strips on the grill.

4

Flip the meat when the bottom is golden brown and crispy. Once both sides are cooked, use scissors to cut the meat into bite-sized pieces.

5

Cook the bite-sized pieces for another minute until fat is rendered and edges are crisp.

Chef's Tips

💡

The quintessential way to eat this is placing meat, rice, ssamjang, and garlic inside a lettuce leaf.

💡

Grilled kimchi is a perfect side dish for this.

💡

Ensure the pork belly has a good ratio of meat to fat.
