Lemon Herb Baked Salmon

Instructions
Preheat oven to 200°C (180°C fan). Line a baking tray with parchment paper.
Mix olive oil, garlic, lemon zest, lemon juice, dill, parsley, and mustard in a small bowl.
Place salmon fillets on the tray, skin side down. Season with salt and pepper.
Spread the herb mixture evenly over each fillet.
Bake 15-20 minutes until salmon flakes easily with a fork. Internal temp should reach 63°C.
Serve with roasted vegetables or a fresh salad.
Chef's Tips
Don't overbake! Salmon is done when it just barely flakes — it continues cooking after you remove it from the oven.
