Croque Madame
A sophisticated French bistro sandwich featuring ham and gruyère cheese between brioche slices, topped with creamy béchamel sauce and a sunny-side-up egg. It is the richer counterpart to the Croque Monsieur.

Instructions
Make Béchamel: Melt butter in a saucepan, whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Simmer until thickened, then add nutmeg, mustard, salt, and pepper.
Preheat oven broiler (grill). Toast bread slices lightly.
Assemble sandwiches: Spread a little béchamel on bread, layer with cheese and ham. Top with the second slice of bread.
Spread the remaining béchamel generously over the top of the sandwiches and sprinkle with remaining cheese. Broil for 3-5 minutes until bubbling and brown.
While broiling, fry two eggs sunny-side up in a skillet. Place one egg on top of each hot sandwich to serve.
Chef's Tips
Use aged Gruyère or Comté for the most authentic flavor.
The egg yolk should be runny to create a sauce when cut.
