Chocolate Lava Cake
Individual warm chocolate cakes with a gooey molten centre. The ultimate chocolate dessert that takes only 15 minutes!

Instructions
Preheat oven to 200°C (180°C fan). Butter 4 ramekins and dust with cocoa powder.
Melt chocolate and butter together in a bowl over simmering water (or microwave in bursts). Stir until smooth and let cool slightly.
Whisk eggs, egg yolks, and sugar together until pale and thick, about 3 minutes.
Fold the chocolate mixture into the egg mixture, then gently fold in flour and salt.
Divide evenly among ramekins. (Can refrigerate up to 24 hours at this point.)
Bake 10-12 minutes — edges should be set but center should still wobble.
Rest for 1 minute, then run a knife around the edge and invert onto plates. Serve immediately with ice cream.
Chef's Tips
Timing is everything! 10 minutes gives a very runny centre; 12 minutes is slightly more set. Test with one ramekin first.
