Avocado Toast with Poached Egg
The ultimate brunch staple. Creamy smashed avocado on toasted sourdough topped with a perfectly poached egg.

Instructions
Toast the sourdough slices until golden and crispy.
Halve the avocado, remove pit, and scoop flesh into a bowl. Mash with lemon juice, salt, and pepper.
Fill a saucepan with 3 inches of water, add vinegar, and bring to a gentle simmer.
Crack each egg into a small cup. Create a gentle swirl in the water and slide in an egg. Poach 3-4 minutes.
Spread mashed avocado on toast. Top with poached egg, red pepper flakes, and a drizzle of olive oil.
Chef's Tips
For the perfect poach, use very fresh eggs — the whites hold together better. A splash of vinegar helps too.
